The healthiest apple pie ever

What if I told you that you could make a delicious pie/cake with only two ingredients? And as if that wasn’t surprising enough, what if I told you those two ingredients were apples and oats? What??? Yes, I know, exactly my first reaction when I first discovered this recipe. It’s true, you can make a delicious and super healthy apple pie with only apples and oats. And guess what? I’m going to guide you through the process.

Ingredients:

1. 5/6 medium ”Aromatic russet” apples (??). I’ve had a few problems figuring out what the english name for this variety of apples was. And I’m still not sure if that’s the correct one! As it turns out, this type of apple might now be sold in every country. Here in Portugal we call it the ”Reineta” apple. 

2. 100/200g Oats 

3. Regular apples. I usually use Fugi or Royal Gala. There’s no right amount. Just chop enough of them in slices so it fills the crust all the way to the top.

1. First, I advise you cover the cake pan with some baking paper, like I did in the picture above, (and then spread just a tiny bit of olive oil on it) just to make sure the pie doesn’t stick to it.

2. Chop the  ”Aromatic Russet” (or whatever you call it) apples into a bowl like in the picture. However, I’d advise you not to chop them as small as I did because it gets harder to mash up them after.
3. Microwave the chopped apples until you can mash them up with a fork.
4. After mashing them up, add the oats and mix them with the apples.

5. Cover the cake pan with a thick layer of this mixture you just made.

 

Filling

1. (This couldn’t be more easy) Chop the regular apples in slices and fill the cake pan. Use a lot of apples (and when I say a lot I really do mean A LOT). Remember that the apples will shrink after you place the pie in the oven so it’s really important you fill the cake pan all the way to the top. If you think you’re putting way to many apples, believe me, you’re not. Sprinkle some cinnamon on top (totally opcional).
2. Put it in a preheated oven (set it as 180• to 200•) and let it cook for about 30 minutes to an hour. Only take it out of the oven when the crust is thick and crispy. Otherwise it will happen what happen to me the last time I did this recipe and when unmolding, the pie will completely fall apart.

 

And you’re done!! Yes, it’s that easy and unbelievably delicious and healthy! If you try it out, let me know your results!

If you don’t know it yet, I’m a big food addict. Seriously, I love to eat. However, eating all the time might not be the best thing when trying to get fit and healthy. For that exact reason, I’m also a big healthy food junkie. Therefore, I’m always looking for new healthy recipes. Asos wishlist

Asos is, undoubtedly, one of my favorite online stores to shop, not only because they offer free worldwide shipping (and since they ship from the UK and I’m from Portugal, there’s also no customs duty- yay!), but because they offer you tons of possibilities in a wide range of prices. Heaven much?

Something I really like doing is going on there (and basically on any other online store) and just add everything I love on my saved items or shopping cart, so I can buy a few of those pieces later or, most of the times, simply to imagine I can buy all of those items and see the total cost (Don’t we all do that? No? Just me? Ok…)

Coachella 2015 best celebrity fashion

It’s that time of year when people go crazy about going to Coachella… and others for not actually going. Well, for now, I sit with the second crowd. Don’t worry, weekend 1 it’s  already over! We just got another one to go through.

Coachella is known not only for its amazing sets but also for its incredible fashion (admit it, 80% of us wants to go only to be able to wear the most out there and fun festival clothes). If you’re anything like me, you probably spent all weekend glued to your instagram drooling over your favorite celebrities’ outfits. My go to delicious and healthy breakfasts

Breakfast is, hands down, my favorite meal of the day. If I could, I would eat breakfast food all day. But since that would be sort of weird, I try to make the best of my favorite meal. However, Since I’m also really avid of healthy eating and low calorie recipes, I’m always looking for new dishes that combine those two requirements: healthy and delicious. With that being said, I’m going to show you my three favorite breakfast recipes that I honestly do all the time.

1. Oats and banana pancakes

This is the.best.thing.ever!! When I first made them, which was during Christmas break, I kid you not, I made them every single day.

Ingredients:

1. 1 large banana (if the banana is small, i usually use one banana and a half)

2. 1/4 of a cup of oats

3. 2 eggs

Directions:

Put the oats in a blending cup. Then add the banana cut in 3 or 4 pieces and finally add the two eggs. Blend it with a blender and voilà, you have your batter.

Apply some olive oil to your pan so it doesn’t stick (but not much!! I usually just pour a bit and then spread it with a tissue). Put the batter in the pan in small circles (normally I can form 2 or 3 circles of batter at the same time) so you can stack them after, like I did in the picture. Wait until it starts getting bubbly on top to flip it. However, don’t overcook them as they taste better slightly undercooked .

Stack them in a plate and chop a kiwi on the side. To keep it healthy, choose honey as the topping. I usually heat up the honey a 3 or 5 seconds so it gets a little bit more runny.

2. Oats

Ohh the good old oats! Such a stable.

This is a quite simple oat recipe for when you’re on the go but still want to treat yourself.

Ingredients:

1. Oats

2. Water

3. 1 yogurt (to your liking)

4. 1 Banana

5. All bran cereal

Directions:

Put the oats in a bowl and then add enough water so the oats can cook. Microwave them until the water disappears. Then add the yogurt (I usually add a low fat blackberry and raspberry one) and chop the banana (kiwi or raspberries also go great with this recipe). To give it a crunchy feel, all a handful of all bran cereal and you’re good to go.

3. Overnight oats

This is perfect if you’re not a morning person and you just want to wake up and have something ready right way.

Ingredients:

1. Oats

2. Soy milk (or regular milk if you prefer)

3. 1 yogurt

Directions:

Place the amount of oats you want in a bowl and them pour enough milk to cover all the oats. Then add your desired yogurt, mix everything with a spoon, add the chia seeds and place it in the fridge. In the morning all you need to do is take it out, chop a banana or any other fruit of your preference (you can also add it to the oatmeal the night before) and if you want a crunchy feel, add a handful of healthy cereals, like all bran cereals.

March Highlights

Let’s just skip the part where I apologize for not posting something for so damn long (even though there aren’t that many of you following me… YET), but my life has been a complete chaos with college and everything. But I’ve got this week off and I’m trying my best to keep up with all the school work, as well as with the blog! I won’t promise I’ll post every week but at least I promise I’ll try (hey, it’s good start).

That being said, I want to start doing these ”monthly highlights” because I really enjoy seeing what everyone has been digging so why not showing you what I’ve been enjoying the most? But let me warn you: this can and may be kind of random, because there’s no particular order or theme. But enough with all the talking and let’s get to what we’re really here for (No, I promise the intro won’t be this long every single month).
